This is a pretty good Pico de Gallo made famous by a local Mexican restaurant down on the PCH called Las Brisas (http://www.lasbrisaslagunabeach.com/).
Pico de Gallo
4 ½ T. finely chopped white onion
4 ½ T. peeled, seeded and chopped tomato
3 T. chopped fresh cilantro
3 fresh serrano chilies, seeded and chopped (wear rubber gloves)
1 T. fresh lime juice
In a serving bowl toss together gently the onion, the tomato, the coriander, the serrano chilies and the lime juice. Add salt and pepper to taste. Makes about 1 cup.
